Yacon Start

Yacón (Smallanthus sonchifolius) resembles a sunflower, producing edible tubers and smaller propagation rhizomes. It's grown in well-drained, organic-rich soil and is used as a healthy snack, in salads, or juiced, with potential benefits for gut health and blood sugar. This plant cannot tolerate freezing temperatures, but it is quite cold hardy.
